Big Batch Chocolate Chia Seed Pudding

Ingredients
- 8 Medjool dates, pitted
- 100g 70% dark chocolate, plus more for drizzling
- 2 scoops chocolate protein powder
- 4 cups almond milk, lukewarm
- Salt
- 1/4 cup flax seeds, ground
- 3/4 cup chia seeds
- 2/3 cup rolled oats
- 1 tablespoon vanilla extract
- 1 cup chocolate cookies, optional
- Yogurt and cocoa powder, for serving
Instructions
- Add the dates to a heatproof bowl. Cover with boiling hot water and soak for 5 minutes. Drain the dates and add them to a blender. Add the chocolate, chocolate protein powder, lukewarm milk and a pinch of salt. Blend until smooth.
- To the liquid, add the chia seeds, oats, vanilla, and chocolate cookies (if using). Stir with a spatula until incorporated.
- Optionally, drizzle a little bit of melted chocolate on the insides of the jars. Pour the chia seed mixture into jars and store in the fridge overnight. The mixture will significantly thicken as it sits.
- Serve with yogurt, a dusting of cocoa and crushed cookies on top.
