Servings: 16
Prep: 10 minutes
Total: 10 minutes, plus chilling

Ingredients

Cranberry Orange Ice

  • 2 oranges, slices
  • 3 cups cranberries
  • Water

Big Batch Cosmopolitan

  • 1 1/3 cups fresh lime juice
  • 1 3/4 cups sweetened cranberry juice (often called cranberry cocktail in stores)
  • 3 cups vodka
  • 1 1/2 cups orange liqueur, such as Cointreau
  • Ice

Optional: 1/4 cup hot honey for a spicy twist

Instructions

  1. Make the cranberry orange ice: Arrange half of the orange slices in a Bundt pan. Add half of the cranberries to the Bundt pan. Arrange the remaining orange slices and add the cranberries on top. Fill the pan with enough water to reach the orange slices on top. Freeze overnight, until solid.
  2. Make the big batch cosmopolitan: In a large container (10-cup or 2.5-liter container), combine the lime juice, cranberry juice, vodka, and orange liqueur. If using, mix the hot honey with 1/4 cup boiling hot water until combined. Add the hot honey mixture to the container.
  3. Fill the container with ice and stir or cover and shake until the mixture feels cold to the touch. Alternatively, chill the big batch cosmopolitan in the fridge for a few hours, until cold.
  4. Pour the cold big batch cosmopolitan in a serving punch bowl or glass container.
  5. Some cake stands can transform in a serving bowl. To do this, remove the lid off the cake stand. Flip the cake stand upside down. Turn the lid upside down. If it fits, nestle the lid in the stand and you will be left with the perfect punch bowl.
  6. Remove the cranberry orange ice from the Bundt pan: place the Bundt pan under running lukewarm tap water. The ice should slide out after a few seconds. Place the ice in the serving bowl. Pour in individual coupe or martini glasses to serve.

Here you’ll find a collection of approachable recipes, from weeknight dinners to desserts, you’ll come back to over and over again. Some of my most popular recipes include my chicken paprikash, orange chicken roast with fennel and shallots or butter beans all vodka. Some recipes are inspired by my Romanian-Hungarian upbringing, and most definitely all come with that Transylvanian resourcefulness!
