Vodka Butter Anchovy Toast

This delicious silky, smooth vodka butter comes together in less than 5 minutes and it’s the perfect appetizer for New Year’s Eve or any other day. My favorite pairing for it is fish, a salty anchovy goes so well with the vodka butter. Serve on a fresh baguette or sourdough bread, warmed in the oven with freshly grated lemon zest and black pepper. While eating this toast isn’t like taking a hearty shot of vodka, you’ll certainly get a pleasant kick at the end.
If you want to take a sweeter route, pair this with your favorite jam or marmalade.
- Add the softened butter and vodka to a food processor. Pulse until combined and fluffy. Scrape the sides and pulse more as needed, until the vodka is fully incorporates.
- Plate the butter on a serving platter alongside fresh bread and anchovies. Lightly toast the bread if preferred for an added crunch and texture, I like to broil it for a couple of minutes in the oven, right before serving.
- Serve with freshly grated lemon zest on top and black pepper.

Ingredients
- 2 sticks (226 g) unsalted butter, softened, room temperature butter
- 3 oz (90 g) vodka
- Anchovy fillets
- Fresh lemon zest
- Freshly ground black pepper
- Fresh bread, such as baguette or sourdough bread

Can we replace anchovies with anything vegetarian?

I think sautéed or grilled mushrooms or artichokes would be a good vegetarian option.

This was SO DELICIOUS. I gave it a shot just to try something new- I’m so glad I did! I loved the original, but had capers, shaved spicy pickled beets and smoked salt on the side for folks who were afraid of the anchovies. Lol

I added some capers with its brine and freshly grated lemon zest as you suggested over a white fish fillet in the hot pan ¡¡¡ the best with some rice ¡Woooow¡
