Turkey Stuffing Casserole

This turkey stuffing casserole is the best thing to make with those Thanksgiving leftovers: turn the turkey meat into a creamy, veggie-packed stew, top with olive-oil tossed stuffing and bake in the oven until golden brown on top. For some extra crunch, broil the turkey stuffing casserole for a few minutes, until the stuffing develops a crisp crust. Scoop and serve right away.

Ingredients

  • 6 tablespoons extra-virgin olive oil, plus more for topping
  • 3 small leeks (350g) or 1 large one, sliced into 1-cm rounds
  • 2 medium carrots (180g), peeled and sliced into 2-cm rounds
  • Salt and pepper
  • 1 tablespoon chopped rosemary leaves
  • 2 tablespoons chopped sage leaves
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups chicken broth
  • 1 x 13.5-ounce can full-fat coconut milk
  • 1 small bunch of thyme, about 5 sprigs
  • 1/2 teaspoon cayenne pepper
  • 2 teaspoons onion granules or 1 teaspoon onion powder
  • 4 cups (547g) chopped or pulled turkey meat
  • 400g (about 4 cups) cooked stuffing

Instructions

  1. Heat the oven to 425°F (215°C).
  2. To a 12-inch skillet over medium-high heat heat 3 tablespoons of oil. Add the leeks, carrots and season with salt and pepper. Cook, stirring occasionally for 10 minutes, until slightly softened.
  3. Add 1 tablespoon more oil, the sage, rosemary and flour. Cook for a minute, until fragrant. Stir to coat the veggies in flour.
  4. While constantly stirring, carefully pour in the broth. Add the coconut milk and bring to a simmer. Add the thyme, cayenne pepper, onion powder, more salt and pepper and simmer for 10 minutes. Taste and season with more salt, as needed.
  5. Add the cooked meat and continue simmering for 5 minutes. Remove the thyme sprigs.
  6. Drizzle 2 tablespoons of olive oil on the stuffing and toss to coat. Arrange the stuffing on top of the skillet. Place in the oven for 12 minutes.
  7. Set the oven to broil and broil the casserole for 2 to 3 minutes until crispy on top.
