Apple Cider Apple Crumble

Ingredients

Apple Filling

  • 3 cups apple cider
  • 3 medium Granny Smith or honey crisp apples, peeled and diced
  • 2 tablespoons butter

Crumble

  • 1 1/2 cups rolled oats
  • 4 tablespoons cold butter
  • 3 tablespoons maple syrup
  • 1/4 teaspoon cinnamon
  • Kosher salt
  • 2 tablespoons turbinado sugar, optional

Instructions

  1. To a large skillet over high heat, add the apple cider. Bring to a boil and cook for 10 to 15 minutes, stirring occasionally, until the apple cider has reduced to half of its initial volume. Add the apples to the reduced cider and continue cooking for 10 minutes, until the cider has reduced to a shiny, sticky glaze that looks like caramel and the apples have softened. Add the butter and mix until combined.
  2. Divide the apples in 2 ramekins or a small skillet.
  3. In a medium bowl, add the oats and butter. Massage the butter in the oats with your fingers until it clumps us into tiny clusters. Add the maple syrup, cinnamon and a pinch of salt and mix to combine.
  4. Top the apples with the oat mixture, a sprinkle of sugar on each (if using) and bake at 400°F for 10 to 15 minutes, or until the oats is golden on top.
  5. Serve with yogurt, berries and more maple syrup on top.

    Hi, Carolina- which was do you prefer reducing your cider down then adding the apples to that followed by the butter. Or sautéing the apples in the butter than adding the cider? It looks like you were experimenting with both and didn’t put your final preference in the instructions (steps 1 and 2 offer different approaches) – or maybe I am just misreading. Thank you! I have actually made this a few times and have loved it each time I was mostly just curious which method yielded the best results for you because I would stick with that way. Thanks for this recipe!
