Brown Butter Tomato Pasta

This brown butter tomato pasta makes a reliable pantry pasta dish: it’s simple, quick and you might find yourself with all the ingredients you need for this in your own pantry. Think of it as an elevated butter noodle, the butter is nutty, and toasty, laced with the humble complexity of caramelized tomato paste. Finish off the sauce with a handful of parsley and freshly grated garlic.

Ingredients

  • Salt
  • 8 ounces (225g) pasta
  • 3 tablespoons unsalted cold butter, plus 2 tablespoons
  • 1/4 cup (65 g) tomato paste
  • 1/2 teaspoon chili flakes
  • 1 bunch fresh parsley, finely chopped
  • 2 garlic cloves, grated
  • Cheese, for serving, optional

Instructions

  1. Bring a pot of water to a boil and season with a big pinch of salt. Add the pasta and cook for 2 minutes less than what the packaging calls for. Drain the pasta, reserving 2 cups of pasta water for later.
  2. In a medium pot over medium heat, melt 3 tablespoons of butter. Add the tomato paste and cook, stirring frequently until it reaches a deep burgundy color and has a toasty smell, about 3 minutes. Add the chili flakes and 1 cup of pasta water. Add the remaining 2 tablespoons of butter to the sauce, vigorously stirring until emulsified.
  3. Add the cooked pasta, parsley, garlic and toss until combined. Add more pasta water if needed. Serve with your cheese of choice on top.
