A refreshing summery cocktail! So crisp you’ll want to go outside and enjoy it – porch, fire escape, balcony or garden, whatever works!

INGREDIENTS (makes 1 drink):

  • the juice of 1/2 to 1 whole grapefruit
  • 3 cm fresh Serrano pepper or jalapeño (1 inch)
  • 1-2 cm knob of fresh ginger (0.5-0.7 inches)
  • 1/2 teaspoon of pink peppercorns
  • 1 tablespoon simple syrup
  • 3 sage leaves
  • 60 ml dry gin (2 oz)
  • tonic water
  • ice

INSTRUCTIONS

Step 1

Juice the grapefruit into a jar or cocktail shaker.

Step 2

Add the chopped pepper, grated ginger, crushed pink peppercorns, sage leaves and simple syrup to the container and crush all the ingredients using a cocktail muddler.

This will accelerate infusion of the grapefruit juice with all of the other flavors.

Step 3

Add the gin to the cocktail shaker or jar on top of the grapefruit juice and shake everything vigorously.

Step 4

Final step, add ice to the serving glass, strain the alcohol in the glass and top it all off with some tonic water.

Garnish the cocktail as you please. I added a wedge of grapefruit, more crushed peppercorns and more sage leaves.
