Sweet Almond Paprika Salmon

Sweet Almond Paprika Salmon

Ingredients
- 1/4 cup extra-virgin olive oil, plus more for baking
- 1/4 cup sliced almonds
- 2 teaspoons paprika
- 2 medium salmon fillets, skinned and cut into 1-inch cubes
- Salt
- 1/2 cup sour cream
- 1/2 cups greek yogurt
- 1 garlic clove, grated
- 1/4 cup chopped parsley
- 1 lemon
- Honey
- Pita, for serving
Instructions
- To a small saucepan, add the oil and heat until sizzling. Add the almonds and toast, frequently stirring, until golden, about 3 minutes. Turn off the heat and add the paprika. Stir until combined.
- Heat the oven to 425°F (215°C).
- To a baking sheet, add the salmon, season with a generous pinch of salt and drizzle with a few tablespoons of olive oil. Toss to combine. Bake for 6 minutes, then broil for 2 minutes, until the edges are slightly charred and crispy.
- In a mixing bowl, combine the sour cream, yogurt, garlic, parsley, a pinch of salt and the zest and juice of a lemon. Stir until combined and season with more salt as needed.
- Assemble the sweet almond paprika salmon dip: Swirl the yogurt dip on a plate, creating a well in the center. Add the salmon to the bowl and top with the paprika almond oil. Drizzle the almond paprika salmon with a bit honey of honey to balance out the savory notes and serve with pita or your bread of choice.
